We all have that thing where we want to eat healthily but we don’t want to be starving or feel hungry, so we choose pizza over freshly cooked food. I am the WORST at this, my favourite food is pizza so I’m trying to cook fresh wherever I can.
Food can be about enjoyment and nourishment.
I just had to write a post about making Madeleine Shaw’s Lentil Ragu! It’s soooo easy, using things from the cupboard and fridge that you probably end up wasting. It’s also ridiculously tasty. Fancy a go at making it?
Make Madeleine Shaw’s Lentil Ragu with aannmariedoeslife:
Place the butter/oil in a large pot, add the onion and sauté with a pinch of salt for 5 minutes until golden. Add the celery, garlic and carrot and sauté for another 5 minutes.
Stir in the thyme and tomato puree then add in the lentils, stock and can of tomatoes. Cook on a low heat for 30 minutes, adding a little water if it gets dry. Season with salt and pepper. It will look very tomatoey and almost wrong, you’ll be thinking ‘woah that’s a lot of water/tomato/stock’ but actually for the 30 minutes to cook everything together, the water is necessary.
Leave it on a low heat for 30 minutes it should look thicker and have reduced significantly.
Grab a bowl of this with some rice, sorted! It’s perfect as a lunch snack or as a dinner with some vegetables.
